Chef Hitoshi Itoga from Tokyo, Japan, learned the art of sushi and traditional Japanese cuisine by training under several of his country's master chefs. After extensive training, he became the chef-owner of his own sushi bar in Tokyo. Chef Itoga was invited to Vancouver in 1989 to introduce authentic Japanese sushi to Canadians, and in 1997 opened Fuji Sushi in Coquitlam BC.
